It’s powered by the H-31 automatic chronograph movement, which is a nice upgrade over the original 17 jewel Hamilton grade 643.

Khaki Pilot Pioneer Mechanical

This watch is nearly identical to the original W10 that Hamilton made for the Royal Air Force in the 70s. With a few 21st century touches, the Khaki Pilot Pioneer comes in a compact 33mm stainless steel case that is mattified to avoid unnecessary glare. The dial is clean and uncluttered, allowing it to pair nicely with everything from a blazer to cuffed denim. Khaki Field Murph

Beyond its military heritage, Hamilton also has a long history in Hollywood, with its watches appearing in over 500 films. One of those films was Interstellar, which first featured the watch seen here called the “Murph” — named by fans for the movie’s principal character. The watch plays a vital role in the film, and now you can have one too. It features a 42mm case, an automatic H-10 movement and is full of nods to the movie — including the word “eureka” printed in morse code on the second hand, which is an integral plot point reference and the only difference from the original watch used in the movie.

A Closer Look at the TAG Heuer 55th Anniversary Carrera

During its 50-year life, the TAG Heuer Carrera has taken various forms and incorporated numerous technical innovations to reach the icon status it holds today. Quintessentially avant-garde, it carries the brand’s DNA, from the minimalist version of the 1960s to the more recent mechanical and connected models. A touchstone of the brand since 1963, the TAG Heuer Carrera is bringing new heat for its 55th anniversary. This special edition of the timepiece has too many details to track down, but we put together four of our favorite bits.

The manufacture movement is housed in a 43mm modular case with a tachymeter bezel and a skeleton dial. The skeleton dial with sapphire case-back is a characteristic of the more recent TAG Heuer Carrera models and allows the wearer — or the admirer — to take a peek at the stunning movement within. The Carrera is the perfect sporty watch if that sport is motoring or simply a Sunday drive — the Carrera exudes its legacy while still holding onto its avant-garde roots.

A New Motor for the Carrera


Developed and produced by TAG Heuer, it integrates 168 components including a column wheel and a vertical coupling-clutch, signatures of Haute Horlogerie. Modern and accurate, this mechanical movement keeps a 75-hour power-reserve stocked in a single barrel. This high-end mechanism can be seen through its skeleton dial, doubled with a sapphire back case. The 3-6-9 dial configuration is a return to the 1963 original disposition. Minutes and hours of the chronograph at 3 and 9 o’clock, small seconds positioned at 6 o’clock, to which an aperture date is added at 4:30.

Punctuated with luminescent baton hands and indexes, the skeleton dial and modular case are water-resistant to 100 meters and available in several variations — steel, carbon, ceramic or gold. A total of 13 new models are available, including a GMT along with a range of straps and bracelets in rubber, leather, metal or ceramic with a deployable buckle.

The Heat Behind Everlane’s New Parka

Everlane has perfected crafting wardrobe basics, but that doesn’t mean the products are basic themselves. While its threads may look perfectly minimal, a lot of thought and construction goes into making them the perfect essentials you want to keep in your wardrobe. From t-shirts to shoes, Everlane has your back. The brand is also radically transparent — from the cost of the hardware on a jacket to the actual labor costs per product. 1. A good use of plastic: Each one of the ReNew Parka’s shells are made from about 64 plastic bottles. That is a good use of all that plastic, but that’s not the only sustainable bit. The down insulation comes from 100% PrimaLoft which is made from recycled fibers as well. In fact, the only things not recycled in the parka are the trim and zipper — but Everlane is working on that too.

2. Fight the cold: This parka is recommended for temperatures from 0 – 35 Fahrenheit. The water-resistant shell keeps the moisture out and the wind at bay. It also comes complete with a storm hood for those extra nasty days. The oversized cut also means you can layer up for added warmth — but the waist adjusting cord will also let you slim it down.

3. Pockets that will warm you: The two hand-warming pockets on the ReNew Parka are lined with fleece, so you will be able to heat your hands up nice and fast and keep them nimble enough to operate your smartphone in the depths of winter.

Rado’s Captain Cook Is a New Interpretation of a Classic

Rado’s Captain Cook is the perfect throwback timepiece that won’t make you look like an old-timer. Based on the iconic 1962 original Rado, the updated watch is remarkably close to the original only with a few major improvements. This new collection of Captian Cook’s is pioneering while still hitting all the classic Captian Cook traits that have kept collectors and watch fans coming back for decades. Available in a few different colors, the green dialed Cook is a great example of the updated look for the 21st Century — a nice refresh from the original blue.

This modern Captain Cook clocks in with a 42mm stainless steel case — a bit bigger than the original and better suited for the modern man’s wrist. But this is far from the only update to make the Captian Cook sea ready for the 21st century. First off, you can take this diver farther, with a water resistance of 200 meters. Like any classic diver, it is outfitted with a screw-down case back and crown. It wouldn’t be a Rado without that classic raised-box style crystal, but now it comes in an up-to-date scratch-resistant sapphire so you don’t have to worry about babying it. The new materials continue with the bezel, which is crafted from high-tech ceramic — which slopes inward towards the dial.

The Captain Cook is powered by a Swiss-made automatic-winding movement with an 80-hour power reserve. This model is outfitted with the original 1960s-style rice grain type bracelet in polished stainless steel — but you can pick from a myriad of strap options and with the EasyClip system you can change the strap quickly and easily whenever it feels right. With all the elements that made the original an icon, the new Captain Cook is still ready for the modern wearer to make it their own.

How a Restauranteur Takes on Every Day

Q: Why is having the right gear — like the Slayer Espresso machine — so important to you?

RH: I grew up in Kentucky, and when I was younger, we didn’t have a tremendous amount of technology in our lives. Partially it’s because of my age, but also because of just where we lived in the world. I always had an appreciation for the finer-made things. So I wanted very few things, but I wanted all of those things to be really well made. As I got into my career those things applied to everything else that I have. Be it the way I carry my knives into work, or be it the Vespa that I choose to ride, or just the general wellbeing of my small area, I try and work on things being curated a bit in my own life. The ability as a chef to have the right tools in your hand is absolutely important, whether the knife is sharp or dull makes the difference between a great experience or a failure in that point.

Q:Your restaurants are known for great music. How has music shaped your restaurants?

RH: When we opened our first restaurant, Charlie Bird, we built the restaurant ourselves. The whole time we listened to hip hop. The night before we opened, I went to my partner and said, by the way, one of the details we haven’t spoken about for tomorrow is what kind of music we’re going to play. He looked at me and he said, ‘What’s wrong with you? We’re going to play what we always play.’ From day one, we went out in the dining room and people were nodding their heads and they loved it. It was old hip hop — that was the idea; it was hip-hop from the early to mid-90s. So it became a real theme for us as people loved Charlie Bird for the food, the wine, but really, the music was really a statement that we made there. We subsequently took it to jazz and funk and soul for a pizza place, inspired by our spirit animal, James Brown. And then Legacy Records became a further iteration.

Q:So, how would you define the vibe of your restaurants?

RH: Every time we look at meals that are individually plated, we find refinement. We also realize that it breaks up conversations — you’re focused on yourself in a very personal moment when you have your own plate of food. So we try to break it up and go back and forth throughout the meal based on that. Those are the key moments, it’s not something you can put your finger on. You can’t push three buttons or pull two levers and make a vibe happen in a restaurant. I think for us, we really tried to come up with something that wasn’t ordinary. So what’s the vibe? People ask me that all the time — What is Charlie Bird? I say that it’s an Italian hip hop restaurant.

How One Artist is Bringing Hawaiian-Inspired Art to the Masses

Artist Nick Kuchar’s life on the west side of Oahu started with a dream-like quality. Born and raised in coastal Florida, Kuchar and his wife, Rachel, ventured to the Hawaiian islands for their honeymoon some 13 years ago and quickly decided to turn the holiday into a permanent stay. Of course, no fantasy is as simple in reality. Before launching his business, the Kuchars first waited tables and scraped-by for a few years. Though the hardship is relative: It was the landscape, sun and surf were their main drivers in those early days.

Then in 2010, life shifted. When looking for artwork to hang in their home, Kuchar instead turned to his background in design and the natural inspiration of his surroundings. “I started illustrating some of our favorite spots here in Hawaii,” he says. “It was places that we surfed at, places we hiked, or little towns we like to hang out and grab lunch at.” This soon developed into an online shop. “It kind of snowballed from there. Some local galleries found my work and we’ve grown our list of galleries that we wholesale to.”

Today, Kuchar’s small business is thriving. In his studio, situated in a small structure behind their craftsman-style home, Kuchar keeps busy sketching and framing his work while his shop manager is handling orders. While his artwork is being stocked in more and more shops across the islands, Kuchar has met growing demand by creating supplemental goods — from hats to towels, coasters and recently a collaborative run of men’s and women’s shoes with Olukai.

Though the story sounds like he fell into success, Kuchar is the first to admit that it’s no easy task to run a creative business, particularly in a place as isolated as Hawaii. “It’s really just about cultivating good relationships and being really reciprocal with the give and take,” says Kuchar. “If you go into it, just seeing what you can take for yourself, I don’t feel like you can be successful in Hawaii. You really have to lean on each other.”

Kuchar considers his business relationships as dear and familial as the personal ones he’s developed in Oahu. The relationship-driven way of life is ultimately what took him from extending his honeymoon phase (that is, living in Hawaii solely for hiking and surfing) to truly staying for the sense of greater ohana.

“Hawaii is very family-based — community and family are very important, which is something that I really like,” he says. “We really just came out here to be part of just the outdoor lifestyle. And on top of that, we’ve found a really rich community.”

We Spent the Day with Hawaii’s Only Shochu Producer

Hawaii saw the arrival of its first Japanese immigrants in 1885 and today, residents coming from Japan amount to nearly 17% of the population on these Pacific islands. Their cultural influence is part of the fabric of Hawaii and yet Ken Hirata is the only producer of one of Japan’s most consumed spirits, Shochu, on Oahu.

Hirata was first inspired to begin producing Shochu more than 20 years ago while on a Hawaiian vacation. Inspired by a fermented taro dish, poi, Hirata was reminded of the spirit — traditionally made from sweet potato — a vegetable that’s in no short supply here. The thought stayed with him, and years later, when looking for a simpler life, Hirata decided to go all-in on his plan to launch a shochu brand on Oahu.

First learning the craft, however, is not so simple. Hirata began by approaching a master, begging to become his apprentice. “Usually that type of technique — recipes and everything — is passed within family members, generation to generation,” he says. His request was denied repeatedly, but finally, after his eighth try, his master accepted. Now relocated in Kagoshima, Hirata studied Shochu-making for three years (a crash-course, he says).

From there, Hirata moved to the North Shore of Oahu, where he and his wife made it a top priority to integrate with their neighbors in Haleiwa. It took time, but eventually, Hirata developed relationships with local farmers and business owners. “We had to struggle in the beginning. It was pretty hard because I didn’t know anybody and so it took time for me to get accepted. But after I got inside the circle, people started to support us,” he says. “We were just trying hard [to be] sincere and respect the local culture and the people in Hawaii.”

After seven seasons, Hirata’s customers travel far and wide for his product. He estimates some 40% are visitors from Japan, another 40% are local and the rest come to his on-site shop from the mainland. “In the beginning, a majority of our customers are local people in Hawaii,” Hirata says. “People in Hawaii try to support local products or produce as much as they can, even though the price is higher than the imported goods.”

While he came here for a simpler, slower life, Shochu making is still a labor of love. In shochu production, there is an on-season and off-season. During the on-season, days start at 5:00 am. In short, his shochu is made by steaming rice in a large wooden steamer, which is then is mixed with koji, to kickstart fermentation. The rice and sweet potatoes are then fermented in ceramic vats (a gift from Hirata’s shochu master). The mash is then distilled and aged for six months before bottling. “I have to be here 24/7,” Hirata says.

But in the off-season, Hirata gets the restful life he came to Hawaii for. “I have lots of freedom. I get up in the morning and eat breakfast with my wife and just relax, talk to local people who visit us. [I] take it easy — surf, play music and drink at night. That’s about it,” he quips. “Pretty simple.”

This Is How a Guide in a Remote National Park Spends His Time

Editor’s Note: In this series, Off the Beaten Path, we’re telling the stories of outdoor guides and how they spend their time off, individually experiencing the very places they uncover for people every day. We’ll take you on their personal journeys — unearthing natural wonders and calling out the gear they use along the way.

The Channel Islands are not just where Pablo Chalott works as a guide three to five days a week. They’re his muse. So, on his days off from leading kayak tours through the island’s sea caves, he heads out, trusty Canon EOS A2 film camera in hand, and gets to work on a personal project: a photographic portfolio of the roughly 140 unique flora and fauna on the island.

Step one: rolling off his cozy REI self-inflating camp bed at the guide campsite, brewing a cup of coffee, lacing on his trusty Timberlands, and taking a hike through the Scorpion Valley of Santa Cruz Island, where he spends most of this time.

Chalott has worked as a guide with Santa Barbara Adventure Company for two years, but he’s been coming to the Channel Islands for much longer than that. He grew up in Oxnard, a town that sits just north of LA, opposite the park’s five rugged Pacific islands. In grade school, he came to the islands for class trips; eventually, he went to Cal State University Channel Islands to get his degree in art. He works in mixed media—watercolor, photography, polaroids bleeding ink, but his go-to is black-and-white film.

A series of his Channel Island landscape shots hang in the ranger station on nearby Anacapa Island, remnants of a science-and-art workshop he took part in, joining biologists at a research station for a five-week stint. The combination of the natural and artistic worlds stuck. Guiding out here was the natural next step after working as a surf instructor and portraitist in Oxnard.

Chalott walks quietly along a dry creek bed rimmed with morning glories, through a green meadow, up hillsides of dry grass. Overhead, Devil’s Peak, the Channel Islands’ highest mountain, wears Pacific Ocean mist like a crown. He stops to photograph what looks like a massive dandelion, white with seeds ready to be blown away. “I love to shoot plants,” he says. “You capture a moment. They bloom and then they die. It’s never here more than once.”

Today, Chalott wants to photograph a Channel Island scrub-jay, which is a much larger bird than its coastal cousin. “They’re always around in the campground, but I can never catch them out here in the wild,” he says.

He stops to listen for the jay’s call. “I don’t think the island has changed my artistic eye. But I do think it has changed my artistic ear,” he says. “All the sounds are inspiring. When I wake up, the birdsong is all around me immediately and it makes me feel safe.”

The jay is nowhere to be found so Chalott decides to look elsewhere for inspiration: the sea. He fell in love with snorkeling several years ago during a surf trip to Indonesia. The Channel Islands have some of the most vibrant diving in all of the US. Now, in May, the water has just edged to a chilly 59 degrees, so he squeezes into his 4.3mm Xcell Drylock wetsuit, then climbs into the water with one of the richest kelp forests on the island, as the seaweed dances with the swell below. Dark kelp bass, brilliant blue opaleye and bright-orange garibaldi—the state fish of California—dart among the kelp, a massive, flowing forest canopy viewed from above.

As opposed to surfing, snorkeling in the ebb and flow near the rocky shoreline makes him feel fluid, he says, “like I can flow with the sea.” Inspiration comes differently underwater. “When I’m out here, I really appreciate color. The water is this clear blue, and the kelp forest becomes a sea of yellows and greens,” he says.

In the evening, Chalott hikes along the sea cliffs on the island’s northernmost side. He snaps a photo of a succulent, his camera equipped with a 50mm lens. “I see some abstraction there,” he says, pointing to one pinkish branch. “But sometimes I also like to just shoot a plant as a plant.” He takes a seat on a bench of rock and dirt that seems nearly custom-made to watch the sun drop over the horizon. “Last photo of the day,” he says. The shutter snaps and he sets the camera to his side.

“I love that it’s almost uninhabited out here and that it has such massive biodiversity, especially marine life,” Chalott says. “The Chumash people who first lived here believed this island was the source of all life. Their creation story said that they walked across a rainbow bridge to get here. Those who looked down were turned into dolphins.” As if on cue, the setting sun lays a beam of pink light across the ocean, straight to him.

If he could, would he want to live here permanently — the 141st unique species on the island? “Of course,” he says.
